The Milwaukee Journal-Sentinel has a detailed story in Tuesday’s edition on the Wisconsin Sheep Dairy Cooperative, the largest source of sheep milk for cheese plants across America.

The article features some great quotes from master cheesemaker Sid Cook:

“We have to have good milk to make good cheese,” said master cheesemaker Sid Cook, by far the largest and highest-profile customer of the Wisconsin Sheep Dairy Cooperative. “You can make bad cheese with good milk, but you can’t make good cheese with bad milk.”

Cook is the fourth generation of his family to make Carr Valley Cheeses in La Valle. Carr Valley’s Gran Canaria – a nutty, intense, sweet and pungent aged cheese made with a blend of milk from sheep, goats and cows – was judged Best of Show at the 2004 American Cheese Society Competition.
